I love holidays that celebrate food! Which means I’m going to be celebrating wildly really soon because National Peanut Butter Cookie Day is on June 12!

I love cookies. (Much to the dismay of my scales . . .)

I love peanut butter. (Again, much to the dismay of my scales. . .)

So, it goes without saying that I love peanut butter cookies — especially the following two recipes!

National Peanut Butter Cookie Day is June 12. Celebrate by making these two easy and yummy peanut butter cookie recipes!

Peanut Butter Blossom Cookies

3 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 eggs
1 cup creamy peanut butter
1 teaspoon vanilla
1 bag Hershey Kisses

Heat oven to 350 degrees.

Beat eggs. Add white and brown sugar. Sift dry ingredients and stir in. Add shortening, peanut butter and vanilla.

Roll into balls the size of walnuts and put on greased cookie sheet. Bake 8-10 minutes until edges are golden brown.

Remove from oven and immediately press one Hershey Kiss in the center of each cookie and remove cookies from baking sheet to cooling rack.

These cookies were a perennial hit with our kids. (I think they liked unwrapping — and eating — the kisses the most!) I predict your grandkids will like them, too!

Peanut Butter ‘N Jelly Bars

3 C flour
1 cup white sugar
1 1/2 teaspoon baking powder
1 cup margarine
2 eggs beaten
1 cup grape jelly
2 C peanut butter chips

Combine dry ingredients. Cut in margarine until you have coarse crumbs. Stir in eggs. Beat till smooth.

Press half of the mixture in the bottom of a greased 9″ x 13″ pan. Spread jelly on top. Sprinkle with 1 cup of the peanut butter chips.

Crumble remaining dough on top. Bake at 350 degrees for 30 minutes.

Remove from oven and immediately sprinkle with the remaining cup of peanut butter chips on top.

Why not dedicate the whole day on June 12 to honor peanut butter? Spread it over your waffles for breakfast. Make a peanut butter sandwich for lunch. Make a peanut butter milkshake to go along with these cookies for your supper.
