I love those little cakes. So yummy. So easy to make. So easy to clean up!
Sometimes, when your grandkids visit, they (or you!) may need a snack. Or, brunch. Or lunch. Or a light supper. Whatever.
Let’s take that in-a-cup idea. Change it. Spice it up. And what do you get? Chilaquiles-in-a-cup!
This little recipe is another time saver. Another one that’s easy to make and easy to clean up. And, it’s sure to please grandkids’ palates — especially if they like Dorito chips.
Chilaquiles in a Cup
1 egg
1 tablespoon milk
salt, pepper
1 tablespoon grated cheese
5 Dorito chips
1 tablespoon salsa
Beat the egg and milk with a fork in a coffee cup. Add salt and pepper to taste. Add cheese.
Break tortilla chips into small pieces to fit into the cup. Stir into the mixture. Add salsa.
Microwave 1 minute 10 seconds. (Depending on your microwave, you might have to cook it a little bit longer.)
Sprinkle a wee bit more cheese on top.
Garnish with sour cream, more salsa, and guacamole.
Yummy.
You could easily double this recipe for older grandkids — or for those who are a tad hungrier.
Because this recipe is so easy and quick to make, this would be a great one for a budding chef (grandchild) to learn how to make. And, one for them to feel success after they make it.

Love this idea! My grandchildren usually want to eat something “fun” when they’re at my house, and they could even make this themselves for the most part. I’ll have to save this recipe for the next time they come over.
